- Pouring water slowly from a height leads to better extraction of the coffee
- The researchers discovered that the spill in this way mixes and better agitates particles
- The technique can give you the same flavor with less coffee beans
The researchers discovered the secret to brew more tasty and well balanced coffee without using additional grains – and it is the simple swan neck kettle. This type of kettle has a long fine side beak, which produces a more precise and more precisely controlled water flow which is the key to better infusion.
Coffee prices have skyrocketed in recent months due to factors such as climate change (including severe droughts and jelly in Brazil) which cause bad harvests, increased production costs and the increase in coffee demand worldwide. Obtaining the same flavor from a smaller part of beans is therefore excellent news for those of us who like to start the day with a payment cup.
As the Guardian reported, researchers from the University of Pennsylvania have discovered that pouring water slowly from a height creates an “avalanche” effect which results in a better mixture of coffee and water, increasing contact time and extracts more compounds from flavors on the ground.
They suggest that you try to reduce the amount of coffee you use by 10% and experience the payment of different heights (up to 30 cm) to see the flavor profile changes.
Choose the right kettle
There are a lot of column kettles, but I have some special recommendations. If you want a traditional kettle for the stove, the coffee and stagg tea kettle to the colleague is an excellent choice.
Fellow is well known for its premium coffee robbery equipment, and the Aiden Precision coffee maker is the choice of many professional roasters, including my Specialty Coffee Association (SCA) instructor.
Its column kettle is available in two versions: the stove and electricity. The version of the stove includes a thermometer with a dial on the top that shows you when the water has reached the optimal brewing temperature.
On the other hand, the electric version has a temperature control that you can define by increments of 1 ° F.
The Dualit 92960 kettle to sink is another excellent option if you are in the United Kingdom. It also has variable temperature controls and a support function that keeps water at your favorite temperature up to five minutes while you weigh and grind your beans. It is a little cheaper than the electricity kettle of Fellow’s Electric.
